This recipe is a central memory from my childhood of my grandmother's wonderful baking.
Apple and Sultana Bran Muffins (a family favorite)
2 cups wholemeal flour
2 cups bran
1/2 cup sugar
4 tsp baking powder
1 1/2 tsp cinnamon
3 medium apples - peeled, cored and grated
1 cup sultanas
1 1/2 tsp baking soda
1 cup milk
100 g butter – melted
2 eggs – lightly whisked
Preheat oven to 200-210C (400-410F). Grease deep patty pans
Place the flour, bran, sugar, baking powder, cinnamon, sultanas and grated apple into a large bowl.
Dissolve the baking soda in the milk. Pour the milk, melted butter and whisked eggs into the dry ingredients – mix briefly until all ingredients are combined. Do not over-mix or the muffins become tough.
Spoon mixture into patty tins. Bake for 15-20 minutes or until golden brown. Stand for a few minutes before turning out on to a cooling rack. Keep in an airtight container.
